ABOUT THE COFFEE
Franklin Muñoz and family are brand new members of the Cedro Alto producers collective and this is the first time their Caturra and Castillo has hit the UK. Located in La Union, Narino at 1900 masl, Franklin & family utilise native harwood shade on Finca Buenavista and, under the criteria of being a collective member, practise responsible waste-water management.
Although the we call the coffee washed, there is somewhat of an extended fermentation. The coffee itself is a 72 hour in-cherry fermentation (anaerobic), then after depulping, 72 hours more in sealed drums with no one-way valve, so not anaerobic, but a low-oxygen environement nontheless.
